Description

Cold-climate berries. Deep color. Bold blackberry character.

Our aseptic Blackberry Purée starts with seedless blackberries grown in a northern climate where cold winters and warm summers help produce the color and flavor we look for. The result is a deeply colored purée with a beautifully balanced sweet-tart profile and the bold berry character that makes blackberry such a versatile formulation ingredient.

With no added sugar, it works across beverages, desserts, sauces, confections, and other fruit-forward applications where real blackberry flavor and natural color matter.

Deep Flavor. Serious Versatility.

Blackberry has enough personality to stand on its own, but it also plays well with a wide range of other ingredients.

Purée Arêté Blackberry Purée brings ripe berry flavor, natural acidity, and rich dark color to commercial formulations. Its seedless format also makes it a practical choice when smooth texture and processing consistency are important.

Use it to develop:

  • RTDs and mocktails
  • Fruited beers and fermented beverages
  • Juices and smoothies
  • Sauces and glazes
  • Bakery fillings and desserts
  • Ice cream, gelato, and frozen desserts
  • Confections and gummies
  • Other fruit-forward food applications

Whether blackberry is the lead flavor or part of a more complex profile, it adds depth, color, and a distinctive berry finish.

Flavor Pairings

Blackberry can go bright, juicy, rich, or sophisticated depending on what you build around it.

It pairs especially well with lemon, lime, orange, raspberry, strawberry, blueberry, ginger, vanilla, tea, chocolate, and plum.

Use citrus to brighten the profile, other berries for a familiar fruit-forward direction, ginger or tea for more complexity, and vanilla or chocolate when you want blackberry to move toward dessert.

Suggested Starting Point

For beer and fermented beverages, start at 0.5–1 lb. of blackberry purée per finished gallon and adjust for the desired fruit intensity.

For RTDs, juices, smoothies, sauces, desserts, and other applications, begin with a pilot formulation and adjust based on how prominent you want blackberry to be.

Use less when blackberry is supporting other flavors or contributing color and acidity. Use more when you want blackberry to lead.

Pilot testing is recommended before scaling to evaluate flavor intensity, Brix, pH, color, haze, filtration, and finished-product stability.
